For the white bean stew:
β Cannellini beans (cooked or canned) β 7 oz / 200 g
β Tomatoes in juice β 7 oz / 200 g
β Vegetable broth β 1ΒΌβ1β

For the garlic bread:

π₯ HOW TO MAKE TUSCAN WHITE BEAN STEW
Step 1 β The base
Finely dice the onion, carrot and celery. SautΓ© in olive oil over medium heat for 7β8 minutes until soft and slightly sweet.
Step 2 β Adding flavor
Add the garlic, chopped rosemary, dried basil and paprika. In just one minute, the aroma of Italy will fill your kitchen.
Step 3 β Simmering
Pour in the tomatoes and vegetable broth, then add the rinsed cannellini beans. Simmer uncovered over low heat for 20β25 minutes.
Step 4 β The secret to a creamy bean stew
Scoop out a ladle of beans with some liquid, mash them with a fork and stir them back into the pot. This makes the stew thick and creamy without any cream. Add the spinach and cook for 2β3 more minutes. Season with salt and pepper, and finish with lemon juice.
Step 5 β Garlic paprika bread
Mix the olive oil with minced garlic, paprika, chopped rosemary and salt. Brush it generously over the bread and bake at 425Β°F (220Β°C) for 8β10 minutes until golden and crispy.
Ladle the stew into bowls, serve with the warm garlic bread, and enjoy!
