🍋 Cheesecake Filling
8oz (226g) softened cream cheese
3 tbsp (38g) sugar (add more or less depending on how sweet you prefer)
1/2 tbsp (3g) lemon zest
1/2 tsp (2.5ml) vanilla extract
1 tsp (5ml) lemon juice

♡ Mix until smooth
♡ Divide into 8 dollops (about 2 tbsps) on a plate lined with parchment paper
♡ Freeze while making cookie dough

🍋 Lemon Cookies
1 cup (200g) sugar
1 tbsp (6g) lemon zest

♡ Mix well (or rub together with fingers)

1/2 cup (113g) melted butter
1 egg
1 tsp (5ml) vanilla extract
1 and 2/3 cup + 1 tbsp (210g) all-purpose flour
1/2 tsp (2g) baking powder
1/2 tsp (2g) baking soda
1/2 tsp (2g) salt

♡ Divide the cookie dough into 8 balls
♡ Place frozen cream cheese dollops inside each cookie
♡ Bake 6 cookies at a time

♡ Bake at 350F (177C) for about 12 minutes
