cabbage: 2 lb, 900 g
Olive oil: 2-3 tbsp
Salt and pepper to taste
Garlic: 3 cloves, minced
One hot pepper, seeded
One medium yellow onion, diced
2 large bell peppers
Butter : 1 tbsp
Ground beef: 1 lb, 450 g ( 80/20 blend)
Taco seasoning: 2 tbsp
Salt and pepper to taste
Diced tomatoes (drained):14 oz, about 400g
4 eggs
Whole milk: 1/3 cup
Cheddar cheese or Mexican cheese blend: 2 cups ( 200 g)
Mozzarella: 1/2 cup ( 50 g )
Cilantro for garnishing

INSTRUCTIONS 👩‍🍳

0:00  shred the cabbage thinly, then warm olive oil in a skillet over medium heat. Add diced hot pepper and minced garlic and cook for a minute or just until fragrant, then add the cabbage and season with salt and pepper. Cover the pan and cook for about 10 minutes, stirring occasionally. Then take it off the heat and let it cool.
2:40 Melt butter over medium heat, add onion and bell peppers and cook for minutes.
3:44 Add the ground beef to the skillet, taco seasoning, salt and pepper and cook crumbling the meat until lightly browned, about 5 mins. Then add diced tomatoes, cook for 2 mins and turn off the heat.
