My 2 year old niece is obsessed with you. Every evening she shows up with her blanket, plops down next to me, and announces, “I wanna watch uncle cooking” (the uncle being you). She makes me explain every single step after watching them. And lately she’s started demanding to use real ingredients to recreate the recipes she watched the night before 😂

RECIPE
For the Crust


   ▢ 8 graham crackers full sheets (135g)
   ▢ ¼ cup toasted pecans (30g)
   ▢ 3 tablespoons granulated sugar
   ▢ ½ teaspoon ground cinnamon
   ▢ 4 to 5 tablespoons unsalted butter melted (56 to 70g)

For the Cheesecake

   ▢ 2 (8-ounce/226g) packages cream cheese room temperature
   ▢ ½ cup granulated sugar (100g)
   ▢ ¼ teaspoon salt
   ▢ ¼ cup sour cream room temperature (60g)
   ▢ 1½ teaspoons vanilla extract
   ▢ 2 large eggs room temperature

I gave away both of my food processor’s last year, thinking I’d never need either.  Now that I’m getting more and more into baking, I regret that decision lol!  I’ve made quite a few of your recipes now and found that the best way for me to hack the finely chopped pecans is to put them in 2 ziplock bags and gently beat them up with a metal utensil. I used a meat mallet 😂

This recipe off your website has been my go to for years! I substitute greek yogurt for the sour cream and adjust the sweetness if i’m adding chocolate, caramel, etc. It’s fool proof and so tasty!

I haven’t made these in a long time but I used to put a vanilla wafer in the bottom. No need to bake like grahams. Perfect for picnics, pot lucks, or parties. 😊

I love making mini cheesecakes.  I usually opt for a vanilla wafer, Oreo, or another pre-made base.

A gingersnap crust would also be amazing.

I'm a BBQ guy.  But I LOVE cooking and have never really delved into deserts because I didn't have a stand mixer.  I was getting ready to get one and I'm at Walmart and there's like 40 Kitchen Aid Artisan mixers for $223.  Couldn't believe it so I got one.  Been watching many of your videos and I decided these would be my first attempt using the mixer.  WOW!  These  are M O N E Y!  Sooooooo delicious.  I topped with Dulce De Leche (your recipe), blue berries and plain.  They were a major HIT, everyone loved them.  Thanks so much for sharing...
