Two thirds of this island receives too little rain, too unevenly, to grow rice. It is where almost all of Sri Lanka's rice is grown. The reason sits in plain sight on every satellite image and almost nobody recognises it. Those thousands of pools scattered across the dry zone are not lakes. They are reservoirs, around eighteen thousand of them, the highest density of stored water on Earth, roughly fifteen thousand dug before the year 1300 and linked into cascades that use the same water three and four times on its way downhill. Ten thousand are still working today.
