Once you make homemade smoked bacon, it’s hard to go back to store-bought! In this video, I’ll show you how I turn a simple pork belly into smoky, peppery homemade bacon from start to finish.
I’ll take you through the curing process, developing the pellicle, smoking the pork belly, cooling it properly, slicing it, and of course—the best part—frying it up and giving it a taste!
🥓 HOME-SMOKED BACON RECIPE
Ingredients:
5 lb Pork Belly
5.7 g Pink Curing Salt #1 — NOT Himalayan Pink Salt
5 Tbsp Kosher Salt
5 Tsp Brown Sugar
½ Cup Coarsely Ground Black Pepper
1 Tbsp Red Pepper Flakes
IMPORTANT: Pink Curing Salt #1 is a curing salt and is NOT the same as Himalayan pink salt. Measure curing salt accurately by weight.
After curing, rinse the pork belly and pat it dry. Leave it uncovered in the refrigerator to develop a tacky pellicle before smoking. Smoke until the bacon reaches an internal temperature of approximately 150–155°F, then cool and refrigerate thoroughly before slicing.
