• Perú: El nombre proviene del valle, el río, el puerto y la ciudad de Pisco, en la región peruana de Ica. La palabra viene del quechua pisqu, que significa ave. Existen documentos históricos de producción y registros del término en el Virreinato del Perú que datan de inicios del siglo XVII (como el testamento de 1613).
• Chile: Posee una tradición productiva muy arraigada, centrada en los valles de los ríos Elqui y Limarí en el norte del país. Chile estableció una denominación legal de origen para su producción en 1931 y renombró un pueblo como Pisco Elqui en 1936
