Mark’s cake recipe is here:

Ingredients:

For the Cake
225g unsalted butter, softened
225g caster sugar
4 large eggs
225g self-raising flour
1 tsp good-quality vanilla extract or vanilla bean paste
Finely grated zest of 3-4 lemons or oranges (or a mixture of both)

For the Citrus Drizzle
85g caster sugar
Juice of 3-4 lemons or oranges

Method
1. Preheat the oven to 180°C (160°C fan) and grease or line a 2lb loaf tin.
2. In a large mixing bowl, cream together the softened butter and caster sugar until pale, light and fluffy.
3. Add the vanilla extract or paste and whisk briefly to combine.
4. Add the eggs one at a time, mixing well after each addition until fully incorporated.
5. Gently fold in the self-raising flour and citrus zest. Mix only until just combined, no more than 30 seconds. Overmixing will result in a denser cake.
6. Spoon the mixture into the prepared loaf tin and level the surface.
7. Bake for 40-45 minutes, or until a skewer inserted into the centre comes out clean.
8. While the cake is baking, mix together the caster sugar and citrus juice to make the drizzle.
9. Once baked, leave the cake in the tin and pierce it all over with a skewer. Slowly spoon the drizzle over the warm cake, allowing it to soak in completely.
10. Leave the cake to cool completely in the tin on a wire rack.
11. Once cold, carefully remove from the tin and transfer to a serving plate.

Optional Finish

For an extra citrus hit, top with a lemon or orange icing before serving.

Enjoy! Perfect with a cup of tea and even better the next day when all the citrus flavours have fully developed. 🍋🍊
