🍲 The Ultimate Restaurant-Style Pilau Rice Recipe

Ingredients

Basmati rice: 300g (good quality, long-grain)
Boiling water: 600ml
Unsalted butter or ghee: 2 tsp
White onion: 1 large, thinly sliced
Cinnamon Stick: 3cm
Cardamom pods: 4 to 8 whole (bruised)
Cloves: 2 to 4 whole
Turmeric powder: 1 to 2 tsp (for that classic vibrant yellow colour)
Bay leaves: 2 whole
Salt: To taste (1 to 2 tsp)

Method

Prep the rice: Rinse the basmati rice multiple times in cold water until the water runs clear, then let it soak for 10 minutes before draining completely.

SautΓ© the aromatics: Turn on the heat and melt the butter/ghee in a large saucepan over medium heat. Add the sliced onion, cover and cook for 5 minutes until soft and translucent. Remember to stir often.

Wake up the spices: Stir in the cinnamon, cardamom pods, cloves, bay leaves, and turmeric. Fry for 5 minute until fragrant, whilst stirring.

Toast the rice: Add the drained rice to the pan and stir gently for 1–2 minutes, ensuring the grains are fully coated in the spiced butter.

Simmer: Pour in the boiling water and stir once. Bring it to a boil, then immediately put a tight-fitting lid on the saucepan and drop the heat to its lowest setting.

Steam: Cook undisturbed for 8 minutes. Do not lift the lid or stir the rice during this time, as the trapped steam does all the work.

Rest and fluff: Turn off the heat and let the pan sit with the lid on for an extra 5 to 10 minutes. Remove the lid, pick out the whole spices if preferred, and gently fluff the rice with a fork before serving.
