Today on Spain in Bites, we travel to try the oldest Castilian menu at Casa Galín, a historic inn with almost 200 years of history in Covarrubias, one of the most beautiful villages in Spain. In this gastronomic temple in Burgos, the same family is now in its fifth generation, cooking the recipes the old-fashioned way. We go right into the kitchen to show you how they prepare the entire menu, especially the olla podrida, their most popular dish and one of the most requested by their customers.
We treat ourselves to a real feast of authentic Castilian food, real food, no pretentious nonsense. In addition to the famous Burgos-style olla podrida, we try the legendary roast suckling lamb, stewed snails with a sauce perfect for dipping bread, the typical Castilian soup, and a slow-cooked roast beef that melts in your mouth. We'll see the restaurant inside and learn a bit about its family history.
We'll also see the inside of the restaurant and learn a bit about its family history. If you haven't yet visited this town or eaten at this inn, let me tell you, it's worth making a stop on your next trip.
