I grew up near Germantown Ave. You could find any number of local delis that made absolutely awesome cheesesteaks and hoagies much better than Pat's or Geno's. And I did... Almost everyday.
About twenty years ago, I went to Philly ate cheesesteaks, all Whiz With Onions, at Pat's, Geno's, and John's. John's was the best, but the best sandwich I had that day was a Roast Pork Italian from Tony Luke's.
I’m from Philly and Pats is definitely the last place I will go for a cheesesteak, I can go to my corner store and get a much better cheesesteak at a better price. Any people who aren’t from Philly and want some suggestions some of us Philly natives can point you in a much better direction.

I was born and raised in Philly and I agree with all the comments. Pat's and Geno's are "known" tourist attractions but they are not the best Philly has to offer. Cheesesteaks like pizza varies from shop to shop and everyone has different tastes. .

I think the grill runs at about 230F on the right and up to 300F on center-left. Furthermore, the ribeye is made sure to be steamed and not grilled. The sauteed peppers get most of their taste from flavor infusion while sitting drowned in spiced oil. Cooked mushrooms are straight from the gallon cans of a restaurant supplier (can be skipped at this stand). All the cheese products are of a lower-temperature-melt-point semi or a fully processed kind.
Onions - throw them in a big pile and let them sit on a grill forever. When serving - pick a bit from the caramelized section and mix it with the fresh one that just got hot enough.
The abundance of fats and quick sugars makes this a very satisfying sandwich, and deserves its own naming designation. However, this should definitely shouldn't be consumed more than once a week. This surely belongs to an American fast-food category.
A Philly cheesesteak can be made tastier and healthier but surely not a such fast pace.
