Ingredients:
1 rabbit, cut into pieces
2 carrots
1 onion
3 bay leaves
Half a head of garlic (6 or 7 cloves)
1 tsp black peppercorns
200 ml extra virgin olive oil
300 ml water
100 ml vinegar
100 ml white wine
Salt and ground pepper
Preparation:
1. Season the rabbit with salt and pepper.
2. Heat the oil in a casserole dish and brown the rabbit.
3. Slice the onion into julienne strips and the carrots into rounds, as shown in the video. Once the rabbit is browned, set it aside. Sauté the vegetables in the same oil used to brown the rabbit, adding the bay leaves, garlic, and peppercorns.
4. When the vegetables are softened, add the water, wine, and vinegar. Bring to a boil, cover, and simmer for 5 minutes. 5. Now add the rabbit to the pot and let it simmer gently for about an hour, checking occasionally until the rabbit is tender.
And there you have it! It's excellent meat, tender and very flavorful. It's best to let it rest for a day or two (if you can wait before eating it) and it will be exquisite, having absorbed all the flavors of the marinade.
