Please note: I doubled all of these recipes to make enough to freeze! Also, I altered a few of these recipes based on what I had on had (i.e. no beet for color, omitted oil, added garlic powder in lieu of garlic, etc.). If you are new to setian, I recommend following the recipes as written until you're more comfortable to swap ingredients in and out. Also please note, the nutritional information at the end reflects these recipe alterations, as I input the ingredient quantities into Cronometer based on what I used.

For easy clean up- crinkle up a piece of aluminum foil to use as a scrubber. Toss when done. I use this on bread bowls. No gooey sponges!

A lot of those wrapped Seitan recipies can also be steamed in an instant pot if preferred.

When I make beef-less wheat meat, I add kitchen bouquet browning sauce. Wheat meat is a great place to add turmeric to the diet--it disappears and doesn't affect the taste at all. I just discovered (cooking for peanuts) how to make chik'n bites for stirfry which takes only ten minutes. I altered her recipe quiet a bit for superior flavor. Barely stir together 1 c gluten, 1/4 c nooch, 2 T braggs, 2 t each garlic and onion powder, 1 t each poultry seasoning and mushroom powder, 1/4 t turmeric, 1/8 t paprika, a pinch of black pepper, and ¾-1 c water. Pinch off 1/2 inch pieces and steam them for 10 minutes. Bam! They are ready to add to finished stir-fry (no oil), chow mein, or Indian/Thai/Japanese curry which will be on the table in less than 30 minutes including all veg chopping and kitchen clean up. These high-protein, high-fiber, nutrient-dense, low-calorie meals are faster, cheaper, and tastier than carryout and oodles better for the environment. The bites can also be made smaller (with 1/2 t kitchen bouquet) and added to any recipe calling for hamburger. Anyway, I loved your video but always like to share discoveries.

Thanks so much Maddie for including this video in one of you newest videos!! How did I miss this one!!! There's sooo much information and awesome recipes! Yup, I agree the clean up is a pain... but soooo worth it! I put a tiny mesh strainer thingy with a little paper towel in the bottom of the sink to catch all the little bits on seitan. Gosh, I hope that made sense, lol. Have a great day and thanks again!

For protein comparisons with meat, it's not just about the grams of protein, but whether it's a complete protein, having all the essential amino acids. Also, look at the bioavailabilty score - the The Digestible Indispensable Amino Acid Score (DIAAS), which shows how well the body is able to absorb the amino acids from a given food. I'd be interested to see the protein comparisons when you include those factors as well. Thanks!

I also make a lot of seitan in one go and freeze it. I love Anthony's and never buy any other VWG now. Seitan always comes out amazing with it! Same with the Nooch.

I'm so glad you did this video. I've never tried Seitan. I've always been kind of scare of it. I'm going to try making one of your recipes and see how it goes. It has to taste better than store-bought.
