Water: 60g
Fresh cream 35%: 70g
Granulated sugar: 100g
Cocoa powder: 10g
Gelatin board: 6g
[Preparation] 1.
Place all ingredients except gelatin in a saucepan and heat. 2.
When the temperature reaches 60°C, add the gelatin and let it dissolve, then strain the mixture through a net.
3. Color the mixture with food coloring.
4. Pour the glassage at about 28℃.
