Hello, friends! 👋 Today we're making a delicious protein-rich lentil bread with a creamy zucchini & chickpea spread. No traditional flour is needed — the base is red lentils, eggs, pumpkin seeds, and psyllium.

🥖 Ingredients:

3/4 cup (150 g) dry red lentils
2 eggs, separated
1 tbsp psyllium husk
2 tsp baking powder
1/2 tsp garlic powder
1/4 cup (30 g) pumpkin seeds
Salt, to taste
1 tsp (5 ml) lemon juice
Cooking oil, for greasing
Sesame seeds, for topping

Instructions:

Cover the lentils with water and soak for 2 hours, preferably overnight. Rinse and drain well. Separate the eggs. Add the yolks to the lentils and set the whites aside. Blend the lentils and egg yolks.

Grind the pumpkin seeds. Add psyllium, baking powder, garlic powder, pumpkin seeds, salt, and lemon juice. Mix well.

Beat the egg whites until stiff peaks form and gently fold them into the lentil mixture. Transfer to a lightly greased loaf pan, sprinkle with sesame seeds, and bake at 356°F (180°C) for 45 minutes. Cool before slicing.

🥒 Zucchini & Chickpea Spread:

1 medium zucchini (200 g), diced
1 tbsp (15 ml) olive oil
1 small carrot (60–70 g), chopped
1 red bell pepper, chopped
1/2 red onion, chopped
2 garlic cloves
2 tbsp fresh parsley
1/3 cup (80 g) canned chickpeas, drained
Salt and black pepper, to taste

Instructions:

Sauté the zucchini in olive oil. Add carrot, bell pepper, and onion and cook until soft. Add garlic, parsley, and chickpeas. Season with salt and pepper. Blend until creamy and serve with the cooled lentil bread.
