Today I’m stocking the pantry with three hearty, shelf-stable meals — simple soups I canned so they’re ready whenever we need a fast, nourishing dinner.

On the canning list:
• Potato Leek Soup
• Loaded Veggie Soup
• Chicken Taco Soup

I walk through the whole process step by step, focusing on safe canning methods, ingredient choices, and how I batch these meals so they’re both affordable and practical for busy weeks.

If you love the idea of having “pantry fast food” ready to heat and serve, these soups are some of my go-to favourites.

Thanks for spending time in the kitchen with me today.

You've inspired me to make some leek & potato soup for our pantry. This year we harvested more than 400 pounds of potatoes and I need to can some of them for Winter eating.
Like you, I keep jars of home-made soups ready-to-eat. Our favorite is like your veggie soup with a tomato base. We add a pint of chuck or sirloin cubes per quart of soup for a complete meal. Thanks for the video! ❤

Your soup looks absolutely delicious!! On a cold winter day and you just don’t feel like cooking because you have been out in the cold for hours. What a wonderful way to have a warm meal super quick!!! Love it!!

Sometimes you need to stop and take a break and enjoy the moments where it is absolutely a gorgeous outside.

I sauté leeks, garlic and cabbage strips in EVOO until tender then add home-canned chicken broth and an egg or two for a quick and yummy egg-drop soup! Leeks are a game changer for any recipe! ❤❤❤

Hey Chelsea! I’ve missed your videos. You’ve not come across my YT feed in a long time and I’m no longer on Instagram so it’s been one of those things. I love to see you are still the same down to earth person. Hope you and the family are doing great! ❤️ Nikki

I enjoy your canning videos. ❤❤

Go find Rose Red homestead, she did a test the same as done at the FDA showing the safety, or not safe, of different electric canners. She is a professor and very smart and does things by the book. It will answer your questions and give you peace to what you might choose to use.

Just ordered mine, so excited

@greenrockgarden2851 10 months ago

RoseRed Homestead did her own testing on the digital canner if you’re interested in watching. I know some people make them controversial, but I am very comfortable with using mine. I think people who have canned forever are too. To each his/her own!
I love the idea of soup ready to go!
I should can some up as well. That would’ve come in handy when a hurricane hit our area and took our power out for quite some time.

Thank you for all- you share. Love your T-towels and aprons. What a great idea to use them as window covering! I'm 70 years old (chock chock) my husband passed away in February so when I can I do it in pint cars and half pints but I love all you share your garden and all your barn animals. Wish I could have chickens but I live in Arizona and only have a small back yard. Grew up in Washington state and we had cows, chickens and rabbits along with a little garden. (4 siblings with mom and dad MUCH smaller than your wonderful family!) Wishing your family a wonderful Thanksgiving!) 🦃🦃🦃🦃

Not having dirt going down your sink drain is a good idea too.

You are amazing!!
Looks great!! 👍🏽

I canned vegetable soup in pint jars and I must say that the flavor is amazing and I love knowing what's in my soup and the convenience is just as good if not better than opening a "can" of soup.. I usually can things like this in the fall/winter when the garden is not producing! I'm out and need to get busy canning more!! After the holiday's I'll get busy!!

My daughter and I made Potato/Leek soup for dinner tonight. This time we also added some cut up english bangers. It was delicious. Normally we don't add the meat. My daughter can't have dairy so I just blend it the way it is. Sometimes we add some oat milk, but I don't think it needs any.
