I know the mouse situation has you stressed, so I was actually thinking about this while you were dealing with it. If you're consistently finding the poop under the kitchen sink, I'd have someone check really closely around where the plumbing comes through the back/bottom of that cabinet and anywhere the cabinet meets the wall or floor. That doesn't necessarily mean they're coming in right there, because mice can travel through the wall and along plumbing, but those little openings are definitely worth checking. I'd also look behind the stove and refrigerator and around any other places where pipes, wires or appliances come through the wall. If you find any gaps, sealing them up is probably going to be just as important as trapping the ones that are already inside. And since you're renting, I'd take pictures of anything you find and send them to your landlord. Hopefully you can get this taken care of so you don't have to keep having your heart stop every time you open that cabinet.

The mice are probably following the plumbing up under your sink. If you see a small space they can slip thru stuff it with steel wool scrubbers.They cant chew thru it.
