That old cast iron pan at the back of the cupboard, crusted black, sticky in patches and a little rusty, is in no danger sitting there. The danger comes the day somebody finally decides to fix it, and the fix people hear about most is the self cleaning oven. No scrubbing, no chemicals, bare iron in one go.

Before that oven door shuts, ten minutes of looking will tell you what you have: the mark on the bottom, the feel of the cooking surface, and whether the pan sits flat. Then what actually takes the crust off without heat, the things that end a pan, and the honest odds.

One early Erie spider skillet by Griswold sold for $10,000 at auction in August 2024. A good modern pan is $30 or $40 in a shop, and most pans in most cupboards are ordinary. Prices here are documented examples, not appraisals.
